i asked my partner what flavour cake he wanted for his birthday and he said lemon cake, so i decided to make it a bit more special by adding cheesecake layers to it.

2 cups of mascapone
2 cups of cream
1 cup of icing sugar
1 cup of white chocolate
1 tsp vanilla

melt the white chocolate in a bowl over a pan of boiling water
in a mixing bowl add the cream and icing sugar and whip untill stiff peaks start to form then mix in the mascapone, vanilla and white chocolate,
line two tins with parchment and and add the mixture and level out, put them in the fridge for at least two hours or over night

1/2 tsp salt
juice of 1 lemon

preheat oven to 350f or 180c
in a bowl cream together the butter and sugar until thick and creamy, add the eggs one at a time incorporating each one before adding the next one.
then add the lemon zest and juice.
sift in the flour and baking powder and salt and mix together
pour into two greased tins and bake on the middle shelf of the oven for about 25 minutes.
once cooled slice off the tops of the sponges to level them and start to layer the cake with the cheesecake layers and lemon curd inbetween each layer.

to make the chocolate shards i screwed up a peice of accitate, (over head projector clear plastic) to make I
theit scrunched up and poured over melted white chocolate and spread it out with a brush then put it in the fridge to harden then i broke it up into shards.
