    tiramasu cake

    i thought it would be fun to create this tiramasu cake,
    i made a swiss roll sponge and cut it into three then i used two pieces for the bottom layer and one for the top. i made a coffee chocolate syrup and drizzled it on then added some mascapone frosting and rolled it up like a roulade and turned it on its side.
    i then added some lady fingers around the outside.

    recipe
     
    sponge
     
    4 eggs
    100g sugar
    100g self raising flour
     
     
    frosting
     
    250g tub of mascapone
    450g icing sugar
    70ml double cream
     
    shop bought lady finger biscuits
     
    to make the sponge
    preheat the oven to 200c fan
    add the eggs and sugar in a bowl and whisk until it is thick and creamy (about 4 minutes),
     then sift in the flour and mix,
    line a large Swiss roll tin with baking paper and add the mixture and gently spread out
    bake for 10 minutes or until it springs back when you touch it
    turn out on to a damp tea towel and gently peel off paper, roll up into a roulade shape and leave to cool down.
     
    make mascapone cream
    whip cream until stiff then add the mascapone and mix, sift the icing sugar in and mix until smooth.
    take sponge unroll it and remove the tea towel, roll back up and slice into 3 pieces (measure against a lady finger biscuit to see how wide each piece should be)
    unroll each piece and drizzle coffee chocolate syrup
     
    to make that coffee cocoa syrup 
     
     7 tbsp of boiling water
    7 tbsp sugar
    1 tsp instant coffee granules
    2 tsp cocoa
     
    in a dish mix all the ingredients  with a spoon until the sugar, coffee and cocoa have dissolved,
    drizzle a little over each sponge and add the mascapone cream and roll up two into tight scrolls, then take the other piece and wrap it around one of the scrolls joining up to the end of the first piece, so you have one bigger roll than the other,
    place the smaller one on top of the layer one
    add the remaining cream around sides of sponge and press on lady fingers, tie with string
    add chocolate shavings to the top

      You are beyond clever. That is SO NEAT as a special occassion dessert – it would be the show stopper for sure. AND IT LOOKS SO DELICIOUS! Tiramisu is one of my all-time favorites, I would just love this. Well done!!
