in England coffee and walnut together is a popular flavour combination, these doughnuts are baked rather than fried, they have a coffee glaze too for extra coffee flavour.
I had some shelled walnuts left over from Christmas so this was a great way to use them up.
They are like a coffee and walnut cake in a doughnut form.
recipe
makes 6 doughnuts
2 tsp dried active yeast
2 tbsp warm water
1 cup flour
1/3 cup sugar
1/4 tsp baking powder
pinch salt
1/2 tsp coffee granules
1 egg
1/2 cup sour cream
2 tbsp butter
1/2 tsp vanilla extract
small hand full walnuts
preheat oven to 180c/350f
put some walnuts into a processor and pulse quickly to finely chop them. i used was about half a 1/3 cup.
in a small dish add warm water and yeast and set to one side for 5 minutes until bubbles start to form
in a mixing bowl add flour, salt, sugar and baking powder,
in a separate small bowl mix the egg and sour cream,
melt butter and stir in coffee granules until dissolved.
pour egg/sour cream into dry mix then add butter/coffee and yeast and stir with wooden spoon until the mixture comes together into a wet dough mixture add the cropped walnuts and stir.
grease a doughnut pan and add mixture into a piping bag and pipe the mix into each cavity
i used a 6 cavity doughnut pan
bake for 10/12 minutes
tip out and cool
make glaze and drops of freshly brewed coffee to icing sugar until thick and glossy, dip each doughnut in and add walnuts to decorate
