    black forest crepes (chocolate and cherry)

    these crepes are inspired by the German cake the black forest gateaux, the crepes are chocolate and then i made a cherry syrup with chunks of fresh cherries and kirsch.
    they were lovely to eat and so easy to make. 

     

    1 and 1/2 cups plain flour
    1 and 1/4 cups milk
    4 tbsp melted butter
    1/4 cup sugar
    1/4 cup cocoa
    3 eggs
    1/4 cup melted chocolate
    pinch of salt
     
    double cream
    1 cup fresh cherries
    1/4 cup sugar
    2 tbsp water (of kirsch)
     
    in a mixing bowl add the flour, cocoa powder and salt, in a separate bowl mix the eggs, milk, melted butter and chocolate then add the dry mixture, sifting 1/3 at a time so it doesn’t get lumpy
     
    heat a pan and add oil or butter, pour enough mix in so it coats the bottom of the pan, after a minute loosen the crepe and flip over and cook for another minute,
    continue with doing the same with the rest of the mixture
     
    to make cherry syrup,
    remove the stones from the cherries and add in a pan with sugar and water or kirsch if using,
    stir until the sugar has melted, use a wooden spoon to smash up the cherries.
    cook over a medium head until the liquid reduces and it turns thick and syrup like ( a few minutes)
     
    pour through sift and put the syrup in one dish and the cooked cherries in a another.
    whip the cream until stiff peaks and add a layer of cream to the crepe then sprinkle some cherry pieces and drizzle over some syrup and fold up.
    dust with icing sugar and add some whole fresh cherries.

      I swear I just want to grab one of those crepes and just stuff it in my mouth. I know everything tastes better in small bites, but mmm those look so good!
