blood oranges are in season at the moment, it was the first time i had tried one.
i made this upside down cake with them, it was really moist and so tasty.
you can use regular oranges rather than blood oranges it you cant find any.
recipe
1 blood orange cut into slices
3 tbsp golden syrup
2 tbsp orange juice
110g (3/4 cup plus two tbsp) self raising flour
110g (1/2 cup) caster sugar
110g (1 stick) butter
2 eggs
juice of half an orange
preheat the oven to 180c 350f
line the cake tin with parchment paper i used a 20 inch tin
in a pan heat the golden syrup and orange juice
in the tin add the sliced oranges and pour over the syrup so the oranges are covered.
then make the cake mixture,
cream the butter and sugar until light and creamy, then add the eggs one of a time.
add the juice then sift in the flour.
mix together then add the cake mixture to the tin on top of the oranges.
bake for 25/30 minutes
turn out and flip over and remove from the tin.
serve as it is of with some pouring cream
