i got some beetroot the other day and decided to make pasta,
i wanted to try to do something new so i decided to make a plain batch and a beetroot batch and then made striped pasta with it.
i ended up making it into farfalle.
its a bit fiddly to make by hand like it did but i bet with a pasta machine it would be allot easier.
i bought fresh beetroot so i cut the top and bottom off and boiled it until tender (about 30 minutes) , then cut off the skin and chopped it into cubes and pureed it in a food processor. If you can buy ready cooked beetroot then do that.
beetroot pasta
75g (cooked pureed beetroot) cook about one meduim sized beet
200g (1 and 1/3 cups) tipo 00 flour (if you dont have that flour use plain flour)
1 large egg
plain pasta
200g (1 and 1/3 cups) tipo 00 flour
2 large eggs
with the flour on the work top or in a bowl, make a well in the centre and add the egg and beetroot, using a fork start mixing until it all comes together, knead into a soft dough.
wrap up in cling film and let rest for half an hour.
sprinkle flour and semolina on to the work top and roll out dough, fold in half and roll out again until it is as thin as possible, i used a rolled cutter and cut long strips.
do the same with the plain pasta
arrange the pasta together in a striped pattern and use a rolling pin to roll in together
use a knife to slice it then a pasta cutter to cut the edges and pinch centre to make bow
let dry over night,
