    baked beet and kale chips

     i love beetroot and i had some left over from some beet pasta i made so i decided i would make chips, or crisps as we call them in England.
    i had some kale so i made both together at the same time.
    for the kale chips you need
    oil
    salt i used pink Himalayan salt but any salt is fine

    in a bowl add the kale and pour in enough oil to lightly coat it (about 1 tbsp) then sprinkle over the salt,
    place spread out on a baking tray lined with baking paper.
    bake in a low oven about 70c to 100c for 1 hour, turn over and cook for another hour

    for the beet chips
    slice the beets using a mandolin so they are thin
    place them spread out on a baking tray lined with paper and bake at the same temperature as the kale chips, they will need a little longer than the kale to dry them out and make them crispy so keep turning them for a further 20 minutes removing the ones which feel done as you go.
    i kept the beet chips plain but you can season then with salt, vinegar if you want.

      So gorgeous! I just made a recipe with beets and found them to be irresistible when it came to photographing. I'm not a huge beet fan but am hoping they grow on me (figuratively, not literally) 🙂
