i decided to line the bottom of the basin with some slices of blood orange as they are in season.

you need
2 pint rimmed pudding basin
string
tin foil
baking paper
large pan with lid
small saucer
2 blood oranges
175g self raising flour
175g soft brown sugar
175g butter
3 eggs
4 tbsp golden syrup
1 tsp baking powder
grease the pudding basin with butter
put a small disk of baking paper in the bottom and put in the sliced orange and 3 tbsp golden syrup.
in a bowl add the flour, sugar, eggs and soft butter and beat until you get a smooth batter, add 2 tbsp zest from an orange and the juice of half.
spoon in to the basin and level out
take some baking paper and place some tin foil on top,
fold a pleat in the middle and place over the basin and secure with string under the rim, make a handle, and cut off the excess paper/foil.
in the large pan place a upturned saucer and place the basin on top, this helps it cook evenly.
fill the pan with enough water to come half way up the basin and put on the lid, steam for 2 hours or until a skewer comes out clean.
