    strawberry and rhubarb mojito and simple syrup

    for the strawberry and rhubarb syrup
    1/2 cup chopped rhubarb
    1/2 cup chopped strawberries
    3/4 cups sugar
    3 tbsp water
     
    in a pan add the sugar, fruits and the water and boil while stirring until the sugar has melted, then let simmer for 5 minutes until the mixture thickens.
    pour into for processor and puree, then pour through sift into a bowl and once cool pour into a sterilsied bottle.
     
    to make strawberry rhubarb mojitos
     
    makes two
    you will also need
    fresh mint
    strawberry and rhubarb to garnish
    4 ounces of light rum
    juice of half a lime
    sparkling water or clup soda
     
    in a glass add some of the syrup (3 tbsp) then add some ice and mint and muddle then add the rum and club soda and squeeze in the lime juice and mix and then add the fresh strawberries and rhubarb to garnish.

      Oh yes! We're still about a month away from rhubarb here but I'll be happy to see it finally emerge from under three feet of snow.
