this pie was so nice, its my new go to recipe for a great family meal.
my partner said it was an 11 out of 10 and the best pie ever so considering his favourite is a steak pie that’s a great thing.
for pastry
1 3/5 cups 200g plain flour
1/4 cup butter
1/4 cup lard
3 tbsp cold water
pinch salt
in a food processor add the flour, salt, butter and lard and mix together, then add a tbsp at a time of ice water until it comes together,
knead gently then cover in cling film and put in the fridge for twenty minutes.
flour work surface and roll out for pie top
(i doubled the pastry recipe to have a pastry top and bottom)
for the filling
half a cooked chicken
1/2 packed of smoked bacon
3/4 oz sliced mushrooms
1 chicken stock cube dissolved in 1 cup of water
1/3 cup cream cheese
1/2 cup milk
1 oz corn flour
1/2 oz butter and little veg oil
fresh tarragon
half red onion
chop the bacon and fry in a pan with oil and butter, add onion and mushrooms, once cooked add milk and cream cheese to the stock and mix then pour in, add the cooked chicken (i used 4 chicken breasts) and chop some fresh tarragon and stir in, add some corn four to thicken.
let cool then put in the pie dish,
with the left over pastry i cut a chicken shape with a knife.
brush with milk and bake for 25 30 minutes until golden
