i really like coconut, especially with lime so i made these little madeleines, they turned out lovely. i think they taste best still warm with a nice cup of tea.
i had a real coconut that i used as a bowl, i got my brother to saw it in half for me.
recipe
80g granulated sugar
90g cake flour
1 tsp baking powder
2 eggs
40g coconut
60g butter
60g butter
zest of 1 lime
1 tsp honey
in a mixing bowl add the flour, baking powder then melt the butter, let it cool a little and add in the bowl with the flour then add the eggs and mix in the coconut and honey and grate the zest of one lime. cover and put in the fridge for at least an hour
melt butter and brush the mould, then sift over flour and then tap out any excess and put them in the fridge to harden the butter.
i got these moulds from wholeport.com i have metal ones too but these worked great.
preheat the oven to 200c
spoon the mixture into the moulds tap the baking tray on the side to spread out the mixture then bake for 6/8 minutes
once cooked i rolled them in a mixture of granulated sugar, coconut and lime zest.
