i love nanaimo bars, they are a Canadian treat that consists of a biscuit layer, a butter cream layer and a chocolate layer.
i was lucky enough to have a family member who lived in Canada so i was able to grow up eating them, my brothers and i loved them and know my partner does too. he begs me to make them all the time, which i don’t mind doing as they are so easy.
i never really follow a recipe any more as i have made them so many times now i just do it by eye.
normally the base layer has a egg in but we find we like it better with out.
3/4 Cup softened butter
1/3 Cup white sugar
1/4 Cup cocoa powder
1 tsp vanilla
2 Cups graham cracker crumbs or digestive biscuits
2/3 cup coconut
chopped walnuts 3 tbsp
preheat oven to 350f
melt the butter
chop the walnuts and crush the biscuits then add to a food processor with the cocoa, sugar, coconut and vanilla and nuts, pulse to combine,
add the melted butter and mix together with the dry mixture, press into a lined tin and baked for 10 minutes.
the mixture will of raised a little in the oven so i always push it pack down as soon as i take it out of the oven, as it cools it forms a solid base.
for the middle layer
3/4 cups softened butter
2 – 3 Tsp milk or cream
2 Tbsp vanilla custard powder (Bird’s)
1/2 tsp vanilla
2 Cups powdered sugar
mix together with a whisk until smooth, spread over cooled base layer, refrigerate for half an hour then make the top layer
melt 4 oz chocolate with 1 tbsp butter in a bowl over a pan of boiling water and pour over and put in the fridge for half an hour, then slice and enjoy.

Did you ever consider writing out your recipe in printable style? I see them out there in blogland and it's so easy then to print – not a biggie though… because YOUR recipes are worth the extra couple of steps.

Way too much butter in the filling for a traditional Nanaimo bar and leaving the egg out of the base alters the fudgey texture.
I found the same problem…oh man, the filling was not very appetizing for me, Maybe after a few tweaks I will get it!
its how my partner likes them but I agree its way too much buttery filling, (I’m not a fan of buttercream)
Yes, please. These will be great for the adults in this house. Chocolate over buttercream over chocolate. I think I just died and went to heaven.
You say Nanimo, I say Nanaimo 🙂 They are named for a town on Vancouver Island, and yes they are delicious!
I'm going to make this the next time I need a treat to take somewhere. I actually made them one time before, but the recipe I was using (a friend's old family recipe) had a couple of omissions and errors in it and I had to guess. It will be nice to have a complete recipe!

Please fix this grammar error to make it more understandable: "the mixture will of raised a little in the oven" should be "the mixture will have raised a little in the oven." It makes no sense the way it is written.
I have a nanaimo bar recipe that requires making a custard to make the base, no baking. And I use nilla vanilla wafers and pecans. There must be a million different recipes, My kids love these. Well, everyone does. Even people who say they don't like coconut.
