    succulent cupcakes tutorial

    I’m so happy with how these cakes turned out, i love to make something that people have to do a double take and think is that real?. these cakes have a chocolate sponge, chocolate frosting and a crushed biscuit and brown sugar sand with sugar paste succulents.

    To make

    line peat pots or terracotta pots with baking parchment and preheat the oven to 180c

    to make sponge
    110g butter
    110g caster sugar
    2 eggs
    110g plain flour
    2 tbsp cocoa
    1 tsp baking powder
    1/2 tsp vanilla extract
    1 tbsp milk
    in a bowl cream the butter and sugar together until pale and creamy then add the eggs one at a time, sift in the cocoa and add vanilla extract, mix in then sift in the flour and baking powder and fold in,
    add some cake batter into each pot and bake for 15/20 minutes.

    to make butter cream
    100g butter
    150g powdered sugar
    2 tbsp cocoa
    mix together until smooth, take each cup cake and trim down the baking paper so you wont see it in the pot and slice the tops off each cake, add the butter cream to the top of each cake leaving room for the sand.

    the sand is made from
    60g brown sugar
    3 digestive biscuits or graham crackers
    crush the biscuits and mix with sugar, add it on top of each cake to look like sand.
    then put succulent on top

     
    to make succulents
    roll out green sugar paste,
    i used a hydrangea petal cutter as i thought the shape looked similar to a succulent
    i have the cutters in two sizes.

     cut two large flowers and 3 small flowers, then use a ball tool and shape each leaf, then make the piece for the centre by rolling a cone shape, then cut with in half with scissors in the middle to make it look like two leaves.
    mix luster dust to make a deep purple colour and brush it lightly on the ends of each leaf.
    let them harden in an egg cup to keep shape.
