    Eaton mess cupcakes

    i love Eaton mess and i love cupcakes so i decided to mix the two together, i used strawberries and raspberries but it can be made with either,
    i also made striped mini meringue kisses to make them extra cute.

     meringue recipe
    i always double the sugar to the weight of the egg whites.
     a medium eggs usually weight about 60g so i used 120g sugar, (make sure you weigh it)

    preheat the oven to 180c 375f
    line a baking sheet with paper and pour over the sugar spreading it out,
    pour the egg whites in the bowl of an electric mixer with the balloon whisk attachment,
    once the oven has heated up put try in for 5 minutes to heat up the sugar,
    during this time turn on the mixer and start beating the egg whites until white and starting to thicken
    remove sugar from oven and tip it in to the egg whites and beat for about 6 to 8 minutes until thick and shiny.
    turn the oven down to 100c
    to make the meringues stripy, turn the piping bag inside out and paint lines of food colouring down the bag,
     
     spoon in the meringue mixture and pipe small mounds on to baking paper
    and bake for 40/45 minutes

    for cupcakes
    110g caster sugar (1/2 cup)
    110g butter (8 tbsp)
    2 eggs
    1 tsp vanilla extract
    110g self raising flour (3/4 cup is 120g so its about two tbsp less of a cup)
    1 tbsp milk
    preheat the oven to 180c 350f
     
    cream together the butter and sugar until pale then beat in the eggs one at a time, making sure each one is combined properly before adding the next.
    add the vanilla extract and beat in,
     sift in the flour and fold in using a spatula trying not to over work it,
    spoon into cake cases and bake for 20 minutes
     for frosting
    60ml double cream
    175g cream cheese (1/2 cup plus 3 tbsp)
    190g icing sugar (2 cups)
    drop of pink colouring
     
    beat the double cream until thick then add the cream cheese and colouring, sift in the icing sugar
    and mix together, spoon on to each cupcake and smooth out using a pallet knife, break up meringues and sprinkle on top with fresh raspberries and strawberries.

      Oh Aimee, you are killing me with your beautiful recipes! Eton mess is one of my most favourite puddings, along with pavlova and eclairs/profiteroles. I saw these lovely little meringues when you did something similar at Christmas and I've still not got round to trying it out! Still that is what pinterest is for!
      Where did you get your lovely baking tray? How pretty is that!
