stenciled buttermilk honey and oat loaf

    Uncategorized

i have been wanting to do a flour stencil on bread for a while now so i decided to try in on this buttermilk and honey loaf.
i added oats around the edges of the loaf for decoration and added some in the loaf too.
i found the massive metal tray in my mums garden and asked if i could have it for a photo back drop i love how distressed it looks.

    recipe
    4 cups strong white flour
1 sachet of active dried yeast
    4 tbsp honey
    1/4 cup oats
    1 cup buttermilk
    1/2 cup water
    3 tbsp butter
    2 tbsp salt
in a stand mixer add the flour, then on one side of the bowl add the yeast, then on the other add the salt, add the honey, butter milk and water and knead with the dough hook for 4 minutes, then add the butter and oats and continue kneading for a further 2 to 4 minutes.
alternatively you can knead by hand if you don’t have a stand mixer.
i then placed the dough in an oiled bowl and let it rise slowly over night in the fridge, but you can let it rise at room temperature for at least an hour.
in the morning i took it out of the fridge and let it sit at room temperature for 1 hour,
then tip out and shape it, i decided to make a round loaf but you can bake it in a tin if you prefer.
i cut the stencil with my silhouette machine, i cut it in the centre of a piece of 12/12 card so i could sift the flour with out getting it on the rest of the loaf.
brush the loaf with milk and place the stencil on top then sift over the flour
remove stencil and use a paint brush to tidy up the pattern if needed, then sprinkle oats around the edge of the loaf.
let proove for half an hour
    preheat the oven to 180c/350f
slash dough with a blade and bake for 35 minutes

I make lots of bread so this is a terrific idea — I can't wait to try it. Thank you for the tutorial. I don't have a silhouette machine but I thought I could find a way to stencil it.
