i had some blueberries that needed using up and i wanted something quick so i came up with these blueberry lemon bars, rather than make a cookie crust, i just made a cheesecake style crust with crushed digestives, sugar, pistachios and melted butter.
recipe
for base
2 cups crushed biscuits like digestives or graham crackers
1/4 cup sugar
3 tbsp crushed pistachios
1/2 cup melted butter
preheat oven to 350f
in a processor add the pistachios to grind up then and the biscuits and sugar and process until fine.
pour into a bowl and then add the melted butter, then press into a lined tin (approx 10×6)
bake for 15 minutes then leave to cool.
make filling
1 cup blueberries
juice and zest of 4 lemons
1 cup sugar
1/4 cup honey
5 eggs
1/2 cup corn flour
1 and 1/2 tsp baking powder
in a pan add the blueberries with a tbsp of water and heat on a low to medium heat until soft and juicy mash the blueberries with a potato masher and press through a sieve into a bowl, add the lemon juice and zest, then mix in the sugar and honey, in a separate bowl beat the eggs then pour in and mix together sift in the flour and baking powder and combine then pour onto the base bake for 25 minutes or until firm
dust with icing sugar and slice up.
