i love cherries and almonds together so i used those as the two main flavours for these blondie’s.
i decided to bake them in a circular tin and cut wedges rather than squares.
these are really easy to make and a quick treat if you are in a hurry.
recipe
1/2 cup chopped fresh cherries plus more for the top.
100g brown sugar (scant 1/2 cup plus 2 tbsp)
100g butter melted (7 tbsp)
2 eggs
100g plain flour (3/4 cup plus 2 tbsp)
100g chocolate chips
4 tbsp sliced almonds
1 tsp vanilla extract
1 tsp almond extract
pinch salt
preheat oven to 350f/ 180c
remove the stones from the cherries and cut in half, spread out in the tin then in a bowl, mix together the eggs and sugar until thick add the vanilla and almond extract and mix in then pour in the melted butter and fold in 1/4 at a time, next add the flour, chocolate chips and almonds and combine and pour in to a lined or greased tin, add some more chopped cherries on top and some more almonds.
bake for 25 minutes
mix some powdered sugar with a few drops of water and drizzle icing over top,
