i love churros, but i fancied changing their shape and rather than long piped churros i rolled the dough into balls.
the dough is basically like a choux pastry that is fried and i was able to roll it with my hands as it was firm enough, i found slightly damp hands roll it better.
traditionally they are eaten with a chocolate dipping sauce but i used dulce de leche instead.
recipe
2 eggs beaten
1/3 cup butter
1 cup flour
1 cup water
3 tbsp brown sugar
pinch salt
1/2 tsp vanilla extract
first in a bowl mix some caster sugar and a tsp of cinnamon to roll them in once cooked and set to one side.
in a pan add the water, butter, sugar and salt, bring to boil and stir until the butter has melted,
take the pan off the heat and pour in the flour and beat in using a wooden spoon until the mixture forms a ball and comes away from the sides of the pan, return to the heat stirring constantly for one minute.
put the mixture in to the bowl of a stand mixer and add the egg a 1/4 at a time and mix it in completely before the next addition, once all the egg is added and the batter is smooth you can either put it in a piping bag or roll it into balls.
heat sunflower oil in a pan or in a deep fat fryer until it reaches 180c or 350f on a thermometer.
drop a few of the churro balls in and cook on each side for 2/3 minutes, then roll in the sugar mixture.
there are a few ways to make dulce de leche at home using a can of sweetened condensed milk
the crock pot method
pour a tin of sweetened condensed milk into a sterilised jar and place on the lid,
cover with water at boil for 8 hours)
if you don’t want to waste 8 hours then there is a faster method
the oven method
preheat the oven to 200c
pour the jar of condensed milk into a glass or ceramic baking dish then place that dish in a larger baking pan (metal is fine) and pour boiling water into it so it comes about half way up the glass dish
bake for 1 hour and 40 minutes.
