jaffa cakes are one of my favourite treats, they are so nice, if you have not had them before they have a sponge layer with a layer of orange marmalade on top and then they are topped with chocolate.
sponge layer
60g butter (4 tbsp)
60g caster sugar (1/4 cup)
60g plain flour (1/2 cup)
1/2 tsp baking powder
1 egg
1 tbsp milk
preheat the oven to 180c/350f
cream together the butter and sugar until pale and then add the egg and mix well, sift in the flour and baking powder and fold in, add the milk to loosen the batter a little then spoon a tbsp of batter in to each hole of a cupcake mould and spread out in to a thin layer. It needs to be about half an inch deep.
i used a silicone cupcake mould from wholeport.com
bake for approx 10 minutes then let cool
add 6 tbsp of fine cut marmalade into a pan and heat up,
spoon some marmalade onto each sponge in a neat circle shape then leave to harden.
or alternativly spoon circles on to a peice of baking paper and place in the fridge then use a pallet knife to remove them and slide them on to each cake.
melt chocolate over a pan of boiling water then dip the top in it to cover the marmalade layer.

Oh my goodness, you've MADE jaffa cakes, that's amazing! I love them so much that when I was little my mum called me Julie Jaffa cake. I used to bite all round the outside, then eat the orange jammy bit, then the cakey bit. (nowadays I just eat it like a normal person of course!)
