    matcha green tea madeleines

    i added some matcha green tea to these madeleines it makes them a lovely green colour.
    i thought it would be fitting to photogragh them in a tea cup as they are flavoured with tea.

    it is best to make the batter the day before and keep it covered in the fridge for at least 12 hours but if you dont have time they can be left in the fridge for at least 1 hour prior to baking.

    the larger madeleines were made in a mould from wholeport.com and the mini ones were made in a mould from t k maxx
    recipe
    cake flour 75g (1/2 cup plus 2 tbsp)
    butter 85g (6 tbsp)
    caster sugar 80g (heaped 1/3 cup)
    matcha 1 tsp
    2 eggs
    1 tsp honey
    melt the butter in a pan then let cool slightly, add in a bowl with the flour, matcha, sugar and eggs and mix well until a thick batter is formed, add 1 tsp honey and mix in.
    cover the bowl with cling film and place in the fridge for between 1 to 12 hours,
    preheat oven to 200c 395f
    melt butter and brush moulds, then sift someflour over and then tap out the excess.
    spoon some batter into each mould and bake for 5 to 8 minutes depending on size.

    i got this tray from anthropologie for my birthday in april, i thought the green colour cakes resembled leaves like the pattern.
