my mum and my grandma and i went on a dog walk yesterday and we found some blackberries.
usually they are not ready to pick till at least august here in england so it was weird to find them so early so we picked some and i decided to make these meringues.
i also found some pretty cornflowers so i picked some too, i just love to forage for things.
recipe
115g egg whites
230g caster sugar
i always weigh out the egg whites and then double the amount of sugar to egg whites.
i use the meringue girls method to make my meringues, i do this by putting the sugar on a baking tray in a hot oven for 5 minutes to heat it up.
during this time start beating the egg whites then add the hot sugar and mix for 5 minutes until thick and glossy
paint gel food coloring on the inside of the piping bag so that it creates stripes when you pipe the meringue.
turn the oven down to 100c
pipe small meringues on to a lined baking tray and bake for 35 to 40 minutes.
some i left plain and others i sprinkled with freeze dried raspberries and a little beet powder for colour.
to fill them whip some double cream with 2 tbsp icing sugar, then add fresh raspberries and blackerries and continue mixing to break them up. pipe onto a meringue then sandwich another onto it.

These look absolutely fantastic! And isn't it always the best when you can get yummy produce right from the source? I was visiting my parents last week and was in fresh produce heaven between the tree loaded with cherries and the other tree loaded with ripe apricots.
