these cookies are so good, the filling is like the centre of a bounty bar and the cookie is like a brownie and then to make them even more naughty i dipped them in chocolate.
if you love bounty’s ad brownies then these are for you.
recipe for cookie
7 ounces plain chocolate 180g
4 tbsp butter
1 and 1 1/4 cup or 175g plain flour
1/2tbsp baking powder
2 eggs
3/4 cup 150g caster sugar
1 tbsp vanilla extract
cocoa powder
in a microwave safe bowl add the chocolate and butter and melt, or use a double boiler, put to one side to cool.
add the eggs and sugar into a bowl and whisk until pale. add the chocolate mix and vanilla and continue to mix, then add the flour and mix well. the mixture will be like a thick cake batter. cover and refrigerate for at least two hours, i left mine over night.
preheat the oven to 160c
line two cookie trays with baking parchment,
the cookie mixture will be firm (like a chocolate truffle consistency)
take a hand full and roll it into ball then roll it in some cocoa powder and place on to a baking tray.
continue this with the rest of the mixture and place in the fridge for 10 minutes.
bake for 12/15 minutes so its firm on the outside and soft on the inside.
for the bounty filling
1 cup coconut
tin of sweetened condensed milk
1/4 cup powdered sugar
in a bowl add the coconut and powdered sugar then pour in a little of the condensed milk at a time until it comes together and can be rolled in to a ball, (approx half a tin)
use a melon baller to make lots the bounty filling into mounds and place it between two cookies and press it together and put to one side while you melt some chocolate to dip them in.
sprinkle on some coconut and leave to harden.
