i had a carton of cream i needed to use up so i decided to make fudge, i made some cookie dough and dotted it into the fudge for an extra treat.
it was really tasty and so easy to make at home.
recipe for cookie dough
75g unsalted butter
85g sugar
125g plain flour
1 tsp vanilla extract
1 tbs golden syrup
60g chocolate chips
in a bowl add butter and sugar and beat until sofa and fluffy, add the vanilla and golden syrup and mix then add the flour and chocolate chips and mix into a dough.
roll into small balls and place on a cookie sheet in the freezer for about half an hour to firm them up
for fudge
150 ml whole milk
150ml heavy cream
250g caster sugar
100g light brown sugar
100g butter
pinch of salt
in a heavy based pan add the milk, cream, sugars and butter, stir until the butter has melted
clip on a sugar thermometer then bring to the boil and bubble
when the thermometer reaches 118c remove from the heat and add the salt, let cool slightly then stir again until the shine starts to go and then pour into a lined tin.
once cooled press in the cookie dough and slice.
keep at room temperature.
