i had a punnet of strawberries i needed to use up so i decided to make these brioche buns, they were so soft and pillowy and the lime icing went really well.
recipe
12 tbsp butter
3 large eggs
1/4 cup milk
3/4 cups water
1 sachet of active dried yeast or 2 and 1/2 tsp
4 and 1/4 cups strong white flour
1/2 cup sugar
1 and 1/2 tsp salt
strawberries enough to make 3/4 cups of puree
1/4 cup sugar
1 lime
1/2 cup icing sugar
in the bowl of a stand mixer add the flour, sugar, salt, yeast and then add the eggs and milk and slowly pour in the water as it mixes with a dough hook and mix for 2 minutes then add the butter a tbsp at a time and continue mixing until combines, turn up the speed and knead for 5 minutes.
place into an oiled bowl and leave to rise for 1 to 2 hours.
during this time make the strawberry filling, puree strawberries so that you have about 3/4 cups of puree, whizz in a food processor and add to a pan with the sugar stir over a low heat, let the strawberries reduce for 10 minutes until it looks thick then press through a sift and let cool
once risen flour work top and roll out dough into large rectangle.
spread over the strawberry mixture
fold in half and slice, twist and wrap it around your hand and make a bun shape
let rise again for 40 minutes
heat the oven to 180c
bake for 20/25 minutes
grate some zest from the lime and put to one side
to make drizzle add some lime juice to the powdered sugar so that it is thick and drizzle over each bun, add some lime zest on top
