i love making my own icecream especially when theres no need to churn it.
the icecream is made with condensed milk and double cream and the juice of blueberries, raspberries and cherries, it tasted really good, and the cones are easy to make too, if you dont have a cone mould you can use a circle of card rolled into a cone.
ice cream
1 cup raspberries
1/2 cup blueberries
1/2 cup cherries pitted
1/4 cup sugar
2 tbsp water
1 can sweetened condensed milk
200ml double cream
3 tbsp icing sugar
in a pan add the fruit and water and sugar and let simmer for 10 minutes
once the fruit has broken down mash it then push through a seive to remove any bits,
let cool,
in the bowl of a mixer add the double cream and icing sugar and mix until stiff peaks, then pour in the condensed milk, then add the fruit puree and combine, pour into a metal tin and put in the freezer for at least 4 to 6 hours.
for the cones
3 tbsp cocoa powder
2 eggs
1/2 cup sugar
4 tbsp butter melted
2 tbsp milk
1 tsp vanilla extract
1/3 cup flour
in a bowl add the melted butter, sugar and cocoa and mix, then add the eggs, vanilla and milk and combine till smooth then finally add the flour. once mixed put the bowl in the fridge for 20 minutes to chill.
heat a pan with a little butter or oil.
ladle approx 3 tbsp of the mixture into the pan and spread around then cook for 1 minute and flip over and cook the other side and flip over again and cook for another minute of two and flip back and cook for another minute, once you can see the colour turn brown remove from pan and roll into cone shape straight away trying not to burn your fingers let cool, an enjoy.
