i love yum yums they are my favourite treat to buy from the bakery.
so i thought i would make my own.
if you have no idea what a yum yum is its a bit like a french cruller crossed with a croissant. almost like a glazed cronut.
the dough is like a quick croissant dough that is laminated and folded.
recipe
(2 cups) 250g strong with flour
1 sachet of dried yeast
1 tsp salt
(approx 4 tbsp) 40g sugar
(approx half a stick) 50g butter chopped chilled and cubed
(1/2 cup) 125g water
1 egg
in a bowl add the flour, sugar, salt and yeast and mix together then add the egg and cubed butter and mix with a wooden spoon while adding the water.
bring together trying not to mix in the butter.
leave for 40 minutes then flour the work surface and roll out, then fold each end into the middle then fold in half,
fold four more times, then wrap in cling film and let rest for 1 hour in the fridge then roll out and fold twice more.
the dough will now be ready to roll on into a long thing rectangle, then cut into pieces.
make a slit in the centre of each piece.
fold one end though the hole a few times
then twist it so it looks like the photo below
heat a pan of oil to 180c or use a deep fat fryer and cook for 3 minutes on each side.
mix some powdered sugar with a little water and brush onto each yum yum.

Lovely recipe. Are they freeze dried raspberries you've sprinkled over the top? And do you dip them jam? Never seen that before, it looks delicious!

These look so yummy! In your instructions when you say "Fold four more times". Do you actually mean fold the dough 4 more times. Or, go through the rolling out the dough and folding over process, 4 more times?
