even though we are not quite out of summer the weather has turned and I’m starting to crave autumn comfort food so i made this almond and apple tart.
its really easy to make and tastes so nice warm.
recipe for dough
200g plain flour
50g ground almonds
110g unsalted butter
2 tbsp caster sugar
1 egg yolk (keep white for filling)
pinch of salt
few drops of almond extract
in a food processor mix the sugar, flour, salt and almonds with the butter then add the egg yoke and almond extract, pulse until it come together then tip out and roll into a ball and cover and let rest in the fridge for at least 20 minutes.
filling
1 egg white
approx 100g ground almonds (add more if mixture to wet)
50g icing sugar
few drops of almond extract
mix the icing sugar and ground almonds together then stir into the egg white and add the almond extract and mix until a paste forms
preheat the oven to 180c
roll out pastry and cut into a circle, spread on the paste then add two apples finely sliced on top and bring the edges of the pastry up and pinch together then brush the pastry with a beaten egg and sprinkle some flaked almonds on top
bake for approx 20 minutes
once cooked you can pour on a caramel i just made a sauce in the microwave with melted butter and brown sugar.
