these little pies are so easy to make and they taste really good, i made these with peaches and blueberries but they can be made with any other fruit you have to use up.
recipe
pastry
200g plain flour
110g butter
1 egg yoke
2 tbsp caster sugar
filling
5 Saturn peaches
3/4 cup blueberries
1/4 cup sugar
in a food processor add the flour, butter and sugar and pulse then add the egg yoke and mix until a dough forms then cover and put in the fridge for 20 minutes.
preheat oven to 180c
peel the peaches and remove the stones then slice them up, add half the blueberries and peaches into a bowl and sprinkle half the sugar.add the other half of the blueberries in a pan with the rest of the sugar and boil for a few minutes until the liquid reduces, push though a sift to get the syrup.
roll out the dough and cut into rectangles, spoon on some syrup and add some of the peach/blueberry mixture then place another piece of pastry on top and press together, then make a small slice in the top and bake for 20 minutes.
add some icing sugar in the pan that the blueberries where cooked in and mix to make into a thick icing add some water if you need to then drizzle over.
