i love chocolate and beetroot together, the deep earthy flavour of the beetroot goes so well paired with the rich flavour of the chocolate, and its great as it keeps the sponge nice and moist.
my partners boss gave me the beetroot for this cake, it weighted 3lbs it was huge i have never seen one so big, my brother weighed less than that when he was born lol.
recipe
approx 3 regular sized or 200g beets cooked and pureed
7 ounces or 200g dark chocolate
1 cup or 140g self raising flour
4 tbsp cocoa
4 eggs
1 cup plus 2 tbsp or 200g brown sugar
1 stick plus 6 tbsp or 200g butter
preheat oven to 170c
melt chocolate over a pan of boiling water and then let cool for 5 minutes.
in a bowl add the butter and 150g of sugar and cream till soft and fluffy, add the yokes and put the egg whites and remaining 50g of sugar in a separate clean bowl and whisk until stiff peaks form,
add the beetroot to the chocolate and combine then add that to the butter yoke mixture and sift in the flour and cocoa powder, add 1/4 of the egg white mixture to the chocolate mixture to loosen it then fold the rest in gently.
pour into two greased baking tins and bake for approx 45/50 minutes.
for frosting
mix 400g butter
100g melted chocolate
4 tbsp cocoa powder
200g icing sugar
melt the chocolate over a pan of boiling water then let cool, mix the butter until soft then add the icing sugar and cocoa powder and mix, pour in melted chocolate and mix.
add half on top of one of the sponges and spread out then add the second sponge on top and add the remaining frosting.
