These little cakes are so nice. they are basically like two small cupcakes sandwiched together.
I added some honey to the sponge and also drizzled it on the mascapone with some pistachios
and half a fresh fig, i think figs go really well with cream cheese.
here in England figs come into season in September but you can find them in some supermarkets all the time.
Recipe
110g self raising flour (3/4 cups plus 1 tbsp)
110g butter (1/2 cup)
110g sugar (half a cup)
2 eggs
2 tbsp honey
2 tbsp crushed pistachios
in a bowl cream together the butter and sugar then add the eggs one at a time making sure each one is properly combined before adding the next, then add the honey and mix through. Finally fold in the flour and pistachios and spoon the batter into a cake mould i used one from wholeport.com
bake for 12 minutes
mix 200g mascapone with 100g icing sugar.
slice any risen tops off and sandwich two of the small cakes together with the mascapone and honey then add some more on top and add cropped pistachios and more honey and a chopped fig.
