these pancakes were lovely and fluffy and the earl grey fudge sauce was so yummy.
the combination of blueberries, lavender. earl grey and chocolate went really well together, and even better they are so easy and quick to make.
recipe
for the pancakes
1 cup plain flour
1 tsp cream of tartar
1/2 tsp bicarbonate of soda
2 tbsp caster sugar
1 egg
150 ml milk
1 drop of lavender extract
blueberries
in a bowl add the flour, cream of tartar and bicarbonate of soda and sugar and mix together.
add the milk and egg and mix
heat a pan and add a tbsp of butter
add a 1/4 cup of mixture in the centre of the pan, sprinkle some blueberries on top and cook for 1 minute then flip over and cook again for another 2 minutes, flip back to cook for a final minute then tip onto a plate, cook up the rest of the mixture.
makes approx 9 pancakes
for the earl grey fudge sauce
100ml double cream
1/4 cup caster sugar
80ml glucose syrup
2 tbsp cocoa powder
100g 4 oz chocolate 70%cocoa
1 tbsp butter
pinch salt
40ml boiling water
1 earl grey tea bag
boil the water and let the tea bag steep for 5 minutes then pour into a bowl and add the salt, and then finely chop the chocolate and add that in to the bowl with the tea,
in a pan add the cream, sugar and glucose syrup and bring to the boil, the pour into the bowl with the tea/chocolate and stir then add the cocoa powder and butter.
keep mixing until the chocolate and butter has melted and the mixture is thick
pour over pancakes.
the left over sauce will keep in a jar in the fridge for 4 days.
