i decided to fill this chocolate cake with a layer of rocky road, it is full of mini marshmallows, nuts, crushed cookies, dried fruit and mini meringue drops. it is great for a party.
this chocolate cake recipe would be good for other recipes too if you double the quantities.
this cake is so decadent so you only need a sliver.
recipe for sponge
4oz 100g dark chocolate
7 tbsp butter
1/4 cup 65ml milk
3/4 cup 85g self raising flour
1/2 cup 110g caster sugar
1/4 cup 75g soft brown sugar
2 tbsp cocoa powder
2 eggs
3 tbsp buttermilk
preheat the oven to 150c 300f
grease and line a round tin
break up the chocolate and add in a pan with the butter and milk and a pinch of salt.
place over a over a low heat until the chocolate and butter has melted then set it aside to cool.
in a bowl add the flour, sugars and cocoa powder and mix together then add the eggs and mix in one at a time, beat the buttermilk into the chocolate mixture then pour into the flour mixture and fold together.
pour into pan and bake for 1 hour
let cool and slice in to two
for the rocky road
1 tin of sweetened condensed milk
200g 8 oz chocolate
2 tsp cocoa powder
mini marshmallows
5 graham crackers or digestive biscuits
pistachios
dried cranberries
mini meringue drops
almonds
white chocolate chips
in a pan add the condensed milk, chocolate and cocoa and stir until the chocolate has melted and it becomes thick,
let cool a little and then add a hand full of marshmallows then add the crushed biscuits, i added a small hand full of nuts and dried cranberries and a sprinkle or mini meringue drops and fudge pieces,
stir in and pour into a lined tin.
put into fridge into firm them place between the two layers of sponge
it will have the consistency of a truffle
