i love Samoa cookies, the flavour combination of caramel, coconut and chocolate is just meant to be so i added the Samoa topping on to these pretzels and it was heaven.
i really enjoy making pretzels, usually i would bathe them in a water bath for 30 seconds first before i baked them but this time i brushed on the water/baking soda mixture and then turned out allot better.
recipe
2 cups 250g strong white flour
2 and 1/2 cups 300g plain flour
1 7g sachet of active dried yeast
2 tbsp sugar
3 tbsp 40g butter cubed
1 cup 200 ml milk
1/3 cup 100ml warm water
1 tsp salt
in the bowl of your stand mixer add the flours and sugar and salt and yeast. then add the water and milk and start kneading slowly after 2 minutes add the butter a bit at a time and turn up the mixer and continue kneading for 5 minutes.
oil a large bowl and place the dough in it and cover it in cling film and let rise for an hour
once doubled in size tip out onto lightly floured surface and cut into 5 equal pieces
take one ball and roll out into long rope
take one and and cross it over the other then twist it again.
bring it back over its self and press the ends on
place on baking tray for 20 minutes
preheat oven to 200c 400f
boil 300ml of water and add 1 tbsp of baking soda then brush on to each one then bake for 20/25minutes
toast 1 cup 75g of dessicated coconut and mix with 1/2 cup 120ml caramel (see recipe below)
brush on the left over caramel then press on the coconut and pipe over stripes of chocolate
to make caramel
1 and 1/2 cup 300g sugar
approx 1/4 cup 50ml water
just less than 1 cup 200g butter
1/2 tsp salt
1 cup 200ml double cream
add the sugar and water in a pan and heat with out stirring until it turns golden then add the butter and stir until melted careful as it will bubble up then add the cream and let cool in the fridge until it thickens.
