i love making homemade pasta, i made this spelt flour pasta to go with a beef ragu i made for tea it went really well.
i think it tastes so much better than shop bough pasta so its worth the effort sometimes.
200g wholemeal spelt flour
3 eggs
1 tbsp olive oil
2 tbsp semolina
mix the flour and semolina and make a well in the centre, add the eggs and oil in the centre and use a fork to stir it bringing in some of the flour as you stir it, then knead it into a ball of dough for a few minutes and then cover it in cling film and place in the fridge for 30 minutes
take out the dough and flour it and roll out the dough with a pasta machine, then fold in half and put through the roller again
once rolled thin enough cut into the shapes you want
hand on coat hangers to dry if you dont have a pasta drying rack.
