i really liked the combination of strawberries and apples in this pie and the nutty pie top was also a hit. this is great for a quick dessert.
i love pie, we ate this warm with a scoop of vanilla ice cream.
recipe
pastry
1/4 cup of pistachios shelled
1/4 cup butter
1/2 cup flour
2 tbsp caster sugar
Pinch salt
1 egg yolk
filling
3 large apples
1 cup chopped strawberries
1/4 cup sugar
1 tsp vanilla
in a food processor add the pistachios and chop until fine then add the flour, salt and butter and pulse to combine add the egg yolk and pulse again until it comes together into a ball. Knead in to a ball and cover and place in the fridge.
Preheat the oven to 180c 350f
In a pan add the chopped strawberries and apples (peeled) and add the sugar and vanilla and 1 tbsp of water. Heat until the strawberries break down then spoon into the pie tin.
Roll out a strip of pastry and press around the edge of the tin then roll out the rest of the pastry and place on top. Trim off the excess pastry and crimp the edge of the pastry and brush with milk.
Bake for 20 to 25 minutes
