i love blackberries and i wanted to make the most of the last of the harvest so i made this really simple meringue pie.
i just love this time of year and i especially love the produce.
recipe
for pastry
1/4 cup butter
3/4 cup plain flour
2 tbsp sugar
a few tbsp of ice cold water
preheat the oven to 350f 180c
in a food processor add the butter, sugar and flour and mix then add about 2 to 3 tbsp of water and continue mixing until it forms a ball.
cover and put in the fridge for 20 minutes
then roll out into a large circle and put into pie dish
crimp the edges and then place some baking paper inisde and add some baking beans ontop and blind bake the pastry for 15 minutes,
then remove the baking paper and baking beans and put back in the oven for 10 minutes
remove from oven and add a tbsp of cornflour into the tart case then add a cup of blackberries and sprinkle sugar over the top,
for meringue
weigh out 1 egg white (approx 40g)
then double the quantity of caster sugar (80g)
place the sugar on a baking sheet and put into the oven for 5 minutes to heat up, in the mean time start whipping the egg white with a pinch of salt until frothy then add the warm sugar and whip until thick glossy and stiff.
pipe onto tart then bake for 15 minutes
after its baked finish off with a blow torch

I definitely don't bake with blackberries enough. This pie is going right to the top of my "to bake" list. So yummy!

The tart looks fabulous. Blackberries were gone from my garden in late August (in New Hampshire). I'll try this next year.
