i love coffee and walnut cake, but i really hate drinking coffee, i know alot of you will think that is odd as you cant function with out your morning coffee (mum I’m talking about you) but for some reason i just don’t like it, i much prefer a cup of tea, i guess i am a proper English girl who enjoys her tea and cake at any hour.
I’m not sure why but i enjoy coffee cake and tiramisu, possibly because its in the form of a calorific cake.
i decided to add some big juicy figs on top of this cake just for some extra flavour.
recipe for sponge
1 cup 220g butter
3/4 cup 100g brown sugar
1/2 cup 110g caster sugar
1 and 1/2 cups 220g plain flour
1 and 1/2 tsp baking powder
About 1/2 cup 50g walnuts ground in a blender
4 eggs
1 tsp vanilla extract
pinch salt
100ml boiling water and tsp coffee granules
preheat the oven to 180c 350f
add the coffee to the boiling water and stir to dissolve, mix in the vanilla extract and set aside
in a bowl cream together the butter and sugars then add the eggs one at a time, scraping down the side of the bowl, then add the coffee mixture stirring in well.
fold in the flour, ground walnuts, baking powder and salt then spoon into a greased bundt tin.
bake for 45/50 minutes until a skewer inserted comes out clean.
whip 300ml double cream with 3 tbsp icing sugar and 1 tsp vanilla extract until thick then spoon onto the cooled cake and add some chopped figs and walnut pieces.
