i absolutely love mac and cheese, it is such a comforting dish, i also really enjoy making it,
i added bacon and sprinkled crushed cheesy crackers on to the top just to pimp it up a bit
i also created then cheesy doughnuts to dip into it.
recipe for mac and cheese
half a red onion
2 tbsp butter for frying plus three for sauce
1 tsp brown sugar
1 cup bacon lardons
2 tsp corn flour
1 and half cups milk
1 cup cream
1 tsp English mustard
1 tbs wholegrain mustard
1 and half cups grated cheddar
1/4 cup grated Parmesan
3 tbsp soft cheese (i found smoked spreadable cheese)
5 cups macaroni pasta
in a pan add 2 tbsp of butter and add the onion (finely chopped) with the brown sugar
then add the bacon and fry off, tip out onto a plate (i do this so i can make the sauce with out lumps)
add 3 tbsp of butter once melted add the flour and stir into a paste then add the milk slowly while continuing to mix then add the cream. the sauce will thicken.
now add onion and bacon back into the pan, add the mustard and all of the cheese,
stir and then take off heat
boil the pasta for 2 minutes less than recommended and then add to the sauce
pour into a large baking dish and sprinkle over 1/4 cup crushed Cheddar crackers and grate on some more cheddar.
bake for half an hour
for doughnuts
3/4 cup self raising flour
1/2 cup butter
1 tsp brown sugar
1/2 tsp English mustard
2 eggs
1/2 cup cheddar cheese
3 tbsp buttermilk
preheat the oven to 180c 350f
mix the butter until soft then add the tsp brown sugar mustard and eggs fold in the flour and cheese.
grease a doughnut pan and pipe in the mixture bake for 10/15 minutes.
remove from pan and grate some more cheese on top and put back in the oven for a minute,
