I love babka bread, i made this one with pumpkin puree in the dough and a chocolate and walnut paste swirled throughout.
Recipe
for dough
3 cups 600g strong white flour
1 egg and 1 egg yoke
200ml milk
150ml water
6 tbsp pumpkin puree
4 tbsp butter
4 tbsp sugar
1 sachet 75g active dried yeast
1 tsp salt
in a bowl add the flour and sugar and salt then add the pumpkin puree and the egg and egg white and milk then add the yeast and start mixing slowly add the water (you may need more or less then you have so watch for the dough to come together). If the mixture is too wet you can add a little more flour a little at a time.
Knead in stand mixer for 5 minutes.
Place in an oiled bowl for at least at hour until it has doubled in size.
Make the filling
10 walnuts
4 tbsp cocoa powder
100g 4 oz dark chocolate
4 tbsp butter
5 tbsp icing sugar
In a pan over a low heat add the butter and chocolate and stir until it melts.
add the walnuts into a food processor and chop until fine then add the cocoa powder and icing sugar. Mix the dry ingredients with the butter and chocolate mixture
Roll the dough out into a large rectangle then spread the mixture on to it and roll it up into a long log. Slice down the centre and weave the two pieces together and place it in a greased bundt tin.
Leave again until it doubles in size for about an hour
Preheat the oven to 180c 350f
bake for about 40 minutes.
Remove from pan and let cool.
