i love these fruits, physalis, or sometimes they are known as cape gooseberries or ground cherries.
i made a compote with them and some clementines.
i added some ground ginger to the sponge to give it some extra flavour,
for sponge
100g brown sugar
100g self raising flour
4 eggs
1 tsp ground ginger
for compote
15 physalis
3 clementines
100g sugar
2 tbsp water
first make the compote by chopping up the physalis and clementines into small chunks and add to a pan with the water and 3/4 of the sugar,
stir to dissolve the sugar and cook over a low heat for about 10 minutes, then pour into a food processor with 2 tbsp more water if needed, pulse the pour back into the pan with the rest of the sugar until the mixture is thick and resembles jam,
let cool
preheat the oven to 200c 400f
line a swiss roll tin with baking paper
for the sponge
mix the eggs and sugar together in a bowl until thick, then add the flour and ginger and fold in gently
pour into the pan and gently spread or tilt the pan to move the mixture around to fill the tin, tap the tin gently to pop any large air bubbles.
bake for 10 minutes
tip the sponge onto a piece of baking paper dusted with icing sugar and peel off the baking paper from the bottom, spread the compote the roll up the swiss roll, let cool
for cream
200ml double cream
3 tbsp icing sugar
whip the icing sugar and cream this thick then spoon onto top the add some more physalis for decoration,
