    pretzel cinnamon rolls from izy hossacks from top with cinnamon

    i recently bought izy hossack from top with cinnamons book, i saw these pretzel cinnamon rolls and decided to give them a go,
    her book is wonderful just like her blog if you haven’t already got a copy i suggest you add it to your Christmas list.

     
     
     
     
    dough recipe
    450g 3/1/2 cups plain all purpose flour
    7g 1/2 oz sachet of dried yeast
    4 tbsp honey or sugar
    1/2 tsp salt
    1 egg
     
    in a large bowl stir together the flour, yeast, honey or sugar and salt, make a well in the centre then crack in the egg and pour in 250 ml (8 1/2 fl oz) lukewarm water, stir together then tip out and knead for 10 minutes. or use a stand mixer with a dough hook for about 5 minutes.
    once smooth and elastic place dough in a lightly oiled bowl and cover for about an hour or until doubled in size
     
    for filling
    100g 1/2 cup dark brown sugar
    3 tbsp cinnamon
    75g 1/3 cup unsalted butter
    1 tbsp bicarbonate of soda
     
    in a small dish mix the sugar and cinnamon,
    roll out the dough in to a large rectangle, spread the butter over the dough and top with the cinnamon sugar.
    roll up the dough starting with the short edge, roll into a log then slice into 12.
    place on a lined baking sheet or oiled ovenproof dish. cover with oiled cling film and leave to rise again for half an hour
    preheat oven to 180c 350f
    in a bowl stir together the bicarbonate of soda with 3 tbsp of hot water.
    remove the plastic wrap and brush on the bicarbonate of soda mixture with a pastry brush, sprinkle immediately with kosher salt.
    bake for 35/45 minutes until dark drown.
     
    i spaced mine out on a baking sheet so they did not take as long to cook, i used pearl sugar rather than kosher salt as i don’t have it.
