i was given a wonderful hamper from Harvey Nichols to sample and with the jar of brandy butter that was in it i made these oreos.
i added it to the filling and it tasted great.
the hamper was beautiful and had wine, chocolate, a Marc de champagne Christmas pudding and loads more.

recipe
125g 1 cup rye flour
110g half cup butter plus half tsp brandy butter
1 egg
155g 3/4 cup sugar
80g 3/4 cup dutch process cocoa powder
1/2 tsp baking powder
1 tsp vanilla extract
pinch salt
in a food processor add the flour, sugar, salt, baking powder and cocoa and mix,
then add the butter and vanilla extract and continue mixing until it resembles bread crumbs then add the egg and mix until it comes together
tip out onto work top and knead together and wrap in cling film and refrigerate for about half an hour,
preheat the oven to 180c 350f
flour work top and roll out and cut into circles and place on a lined baking tray
cook for 6/8 minutes.
for brandy butter oreo filling
180g 3/4 cup trex (vegetable shortening) or butter
a dessert spoon of brandy butter
100g 1 cup icing sugar
1 tsp vanilla extract
1 tbsp milk
whip together the trex and brandy butter then add the vanilla extract and icing sugar, finally add the milk. spoon onto one cookie and sandwich another on top
