    pomelo lemon and poppy seed muffins with ciitrus thyme syrup glaze

    these buttermilk muffins have little pieces of chopped up pomelo in with the juice and zest of a lemon. i brushed them with a citrus honey and thyme syrup and sprinkled some pearl sugar on top.
    they are packed with flavour.
    I have been on a citrus overload lately as they are in season.

    makes 12
    recipe
    7 tbsp (100g) butter

    3/4 cup (170) sugar
    2 eggs
    2
    cups (160g) all purpose flour
    1/3 cup (28g) rolled oats
    1
    tsp baking powder
    3/4 tsp baking soda
    1/2 tsp salt
    1-2 tbsp fresh lemon
    zest
    1/4 cup (60 ml) lemon juice
    1 cup (250 ml) milk
    1/2 cup (125 ml) buttermilk

    3 tbsp chopped up pomelo flesh
    1/8 tsp chopped fresh thyme
    2 tbsp poppy seeds
    preheat the oven to 180c 350f
    line a muffin tin with paper cases
    in a bowl cream together the butter and sugar until light and fluffy then add the eggs one at a time ensuring you scrape down the bowl.
    sift he flour, baking powder and soda into a bowl and add the salt and oats and poppy seeds.
    in another bowl mix the milk and butter milk and 1/4 to the mixture, then add 1/4 of the flour mixture and continue folding them both in until all the dry and wet ingredients are folded together.
    finely add the lemon juice, zest and chopped up pomelo and thyme.
    use an icecream scoop to evenly scoop the batter into the cake cases and bake for about 22 minutes,
    to make glaze
    juice of 1 lemon
    2 tbsp honey
    zest of 1 lemon
    1/2 cup sugar (115g )
    1 tsp fresh thyme
    add all the ingredients and stir until sugar has melted then let thicken for 3 to 4 minutes,
    brush on muffins while they are cooling then sprinkle on some pearl sugar.

      These look amazing and your photos are so beautiful. Where do you buy your pearl sugar? I looked in the supermarket but couldn't seem to find any.

      I just made Meyer lemon and poppy seed muffins but these look exquisite – the thyme syrup glaze sounds scrumptious!

      When I find a blog with pictures as beautiful as these, I always get a bit worried that the flavours won’t ad up to the styling. These went above and beyond my expetations.
