these muffins are perfect for breakfast and are great eaten still warm.
i love blood oranges and i wanted to make the most of a big bag i picked up recently to i made these muffins with some freshly squeezed orange juice for breakfast.
the season for blood oranges is almost over, but these would work well with regular oranges or even lemon.
i mixed some freshly brewed earl grey tea with some powdered sugar to make a glaze and brushed it on as soon as they came out of the oven.
recipe
makes 6 muffins
1/2 cup 115g brown sugar
1/2 cup 110g butter
2 eggs
3/4 cup 115g self raising flour
4 tbsp poppy seeds
juice of 1 blood orange and 1 tsp zest
preheat the oven to 180c 350f
in a bowl cream together the butter and brown sugar until soft and fluffy then add the eggs one at a time scraping down the sides on the bowl.
sift in the flour and add the poppy seeds and fold in then add the orange juice and zest.
fold in again then spoon into muffin cases
bake for about 15 minutes
for glaze mix 2 tbsp of freshly brewed earl grey tea with powdered sugar until thick enough to brush onto muffins. (about 3/4 cup)
