I love how easy baklava is so make, and it tastes so good. I like to add a little cinnamon and honey into the syrup it seems to make it taste so much better
I made these for my mum as she loves baklava, she lived in Greece for a few months when she was in her 20s so she has fond memories of this treat.
Recipe
1 pack of filo pastry
1 and half cups walnuts
1/2 cup 110g butter
Preheat the oven to 180c 350f
place the filo pastry under a tea towel. Melt the butter.
put the walnuts into a food processor and pulse to break up the nuts. Don’t over do it as you want them to finely chopped but not ground.
Line a rectangle tray.
brush melted butter onto a sheet of filo pastry and fold it to fit into the tin. Continue until there are 3 layers then tip half the nuts onto the pastry and spread out.
add three more layers of pastry brushed with butter the add the rest of the nuts and spread out. Reserve some to decorate the top.
Add three more layers of pastry then use a sharp knife and slice it into individual pieces
sprinkle the remaining nuts onto the top of each square and bake for 25 minutes
syrup
1/2 cup sugar
1 tbsp orange blossom water
1 tbsp rosewater
1/4 tsp cinnamon
1 tsp honey
4 tbsp water 1/4 cup
add all the ingredients for the syrup into a pan and stir until the sugar has dissolved then heat until it thickens about 5 minutes.
Pour into cooled baklava.
It has to be cool or it will go soggy.
