these cupcakes were so yummy. i love maple syrup so when i saw the recipe for maple pecan cupcakes on bakingmad.com i had to try it. i decided to add my own spin on it by adding a little maple rosemary bacon and some brown sugar in the frosting
i was asked to pick a recipe to try out at bakingmad.com and it was so hard to choose this lemon cake looked great too.
It was my first time trying bacon with a sweet recipe so i just winged it with the recipe but it turned out great. Do you have a good sweet bacon recipe?
Here I England I think bacon in cakes is still quite new.
rosemary maple bacon.
preheat the oven to 180c 350f
coat 6 rashers of streaky bacon in some maple syrup I just rubbed on some until it was completly coated and sprinkle over some rosemary then place on a wire grill rack over a baking tray to catch the fat and bake in the oven for 10 minutes. turn over and bake for a further 5 to 10 minutes until crispy.
cupcake recipe
2 eggs
125g 4 1/2 oz butter
125g 4 1/2 oz caster sugar ( i used half soft brown sugar and half caster sugar)
225g 8oz self raising flour ( i use allinson flour)
1/2 tsp vanilla extract (i used nielsen massey)
4 tbsp maple syrup
preheat the oven to 180c 350f
cream together the butter and sugar until fluffy, then add the eggs one at a time,
then add the maple syrup, vanilla extract.
sift in the flour and fold in then add the some chopped rosemary maple bacon,
spoon into muffin wrappers and bake for 15 20 minutes.
to make frosting
200g butter
400g icing sugar
2 tsp icing
(i used 300ml double cream and 5 tbsp icing sugar, and brown sugar and 2 tbsp maple syrup instead)
to candy the pecans add 12 pecans in a pan with 2 tbsp maple syrup and fry until the pan is dry then pour onto making paper to dry
pipe the frosting on and decorate with some bacon and the pecans.

Having just made bacon cookies, I'm mesmerized by these cupcakes. Bacon is great in anything, seriously! The flavor it brings to desserts is addictive, especially if you like the sweet and salty combo.
