I went to the shop to buy an organic apple as I was making my own sourdough starter but they only had them in bags of 4 for i used one of the left overs for these muffins.
I just threw them together last minute as a snack. They were really nice. I had some apple blossom that I got from an edible flower website but they were a bit wilted by the time they arrived so i could not use them for decorating the cake i had planned so i used them in and on these (they are the small red/pink flowers you can see in the photos). Its amazing how the apple blossom tastes so much like an actual apple.
We got some duck eggs from a local farmers market, I love baking with them as they are always wonderful and creamy.
Recipe
110g 1/2 cup caster sugar
110g 1/2 cup butter
2 large duck eggs
120g 1 cup self raising flour
1 apple
1/4 cup flaked almonds
Thumb sized piece of marzipan
Edible apple blossom (optional)
Preheat the oven to 180c 350f and line a 6 hole muffin tin with wrappers
In a bowl cream together the butter and sugar until soft and fluffy then add the eggs one at a time.
Fold in the flour with a spatula
Peel and core the apple slice some flat pieces to place onto the top of each cake then slice the rest into small chunks then fold them into the batter with the almonds. Cut the marzipan into small chunks and fold that through then scoop into the cake wrappers and place the apple slices pushed into the batter ontop so they are visibly poking out.
Bake for about 20 minutes or until a skewer comes out clean.
