    mangosteen, lemon, rosewater and chia seed madeleines(ish)

    mangosteen where have you been all my life.
    wow what a beautiful fruit, not only does it taste amazing but it is a super food and it really good for you too.
    don’t you love it when something healthy taste great and not like green yuk?
    keeping with the superfood theme i used chia seeds too because i like any excuse to make a cake that is good for you.
     I made these little cakes in madeleine moulds but they are not as fluffy as the traditional madeleines because of the added chia seeds.

    i thought that rosewater and lemon would go well with the flavour of the mangosteen.
    i used honey rather than sugar but i used butter (sorry that’s the only unhealthy element) , i may experiment next time and use coconut oil or you coud and let me know how it goes.

    recipe
    50g plain flour or spelt flour
    50g runny honey (i love blossom or heather honey)
    the fruit from inside one mangosteen, squeezed for the juice
    zest of half a lemon
    2 tbsp rose water (the brand i have is very subtle so i use alot you may need less)
    50g butter
    4 tbsp chia seeds
    1 egg
    preheat the oven to 220c
    grease madeleine tins with butter then dust with flour and tip out the excess.
    in a bowl mix the juice from the mangosteen with the honey and rosewater and then melt the butter and add to the mixture, mix in the egg the stir in the flour, chia seeds and lemon zest.
    spoon batter into moulds and bake for 6 to 8 minutes.
    dust with powdered sugar.

      Mangosteen is truly amazing. Had it for the first time in Indonesia and have had a hard time finding it again but some Asian markets carry it. In my experience coconut oil can make desserts more crumbly, like they hold less well together? But the chia might counteract that, haha.
