    tri coloured mocha cake

    My partner has been asking me to make a coffee cake for ages so i decided to make this mocha one.
    It has a chocolate layer a coffee layer and a vanilla layer. Then I iced it with whipped cream with some ground coffee and cocoa powder.

    We went on a dog walk to a local country house and I saw these magnolia flowers and had to pick some i love them. I would love a tree in my garden but I think I would get fed up of picking up all the petals.

    For the vanilla layer
    110g 1/2 cup sugar
    110g 1/2 cup butter
    2 eggs
    110g 3/4 cup self raising flour
    2 tsp vanilla
    2 tbsp milk
    preheat the oven to 180c 350f
    grease and line three 12 inch tins
    For the vanilla layer whip the butter and sugar until soft and fluffy then add the eggs one at a time making sure each one is properly combined before adding the next, then add the vanilla extract and mix in, then add the flour and fold in with a spatula and spoon into one of the tins.
    for the coffee layer
    110g 1 / 2 cup sugar
    110g 1/2 cup butter
    110g 3/4 cup self raising flour
    2 eggs
    2 to three tbsp ground coffee mixed with 4 tbsp boiling water
    1 tsp cocoa powder
    cream together the butter and sugar until soft and fluffy then add the eggs one at a time making sure each one is properly combined before adding the next.  Then add the coffee and cocoa powder and mix.
    fold in the flour with a spatula and then spoon into another of the tins. 
    For the chocolate layer
    110g 1 / 2 cup sugar
    110g 1/2 cup butter
    2 eggs
    50g 4 0z dark chocolate
    5 tbsp cocoa powder
    5 heaped tbsp chocolate chips
    110g 3/4 cup self raising flour
    Melt the chocolate over a pan of boiling water
    Cream the butter and sugar until soft and fluffy then add the eggs one at a time,  add the cooled melted chocolate then fold in the flour and cocoa powder.
    then stir through the chocolate chips.
    Tip into the third tin the  bake for about 25 to 30 minutes,  check with a knife or skewer to see if it’s cooked if not leave for another 5 to 10 minutes. 
    Let cool
    For frosting 
    600 ml double cream
    5 tbsp icing sugar
    3 tbsp cocoa powder
    2 tbsp ground coffee 
    1 tbsp vanilla extract
    add the cream, icing sugar and vanilla into a bowl and whisk then add the cocoa and coffee and continue whisking until stiff
    Level out cakes and pipe the cream between each layer then stack up the sponges. 
    Add frosting to the top then scrape around sides 
    I decorated the top of the cake with cacao nibs as the flavour goes well with coffee.

      Aimee, this is so so lovely. All of my favorite things in a single cake; coffee, chocolate, and delicate magnolia flowers. I can only imagine that it tasted as good as it looks! xx
