    pear blueberry elderflower scones with almond amaretti crumb

    i love scones, they are great as a mid morning snack, i used almonds, blueberries and pears in the scone dough with a little elderflower cordial and i made a amaretti almond crumb to go on the top.
    im a sucker for a crumb top on cakes so i couldnt resist putting it on my scones.

    Recipe
    360g 2 and half cups plain flour
    100g 1/2 cup brown sugar
    8 tbsp butter
    150ml 2/3 cups double cream
    1 egg
    1 tsp baking powder
    pinch of salt
    1/4 cup flaked almonds
    2 small pears chopped into chunks
    1/2 cup blueberries
    2 tbsp elderflower cordial
    for topping
    4tbsp cream
    1 cup crushed amaretti cookies
    1/4 cup flaked almonds
    preheat the oven to 200c 400f
    In a food processor add the flour, salt and baking powder and sugar and mix together
    then add the butter and mix until the mixture resembles bread crumbs.
    Mix together with egg and cream and elderflower cordial and pour into the mixer and pulse until it comes together.
    Chop the pears small chunks then gently fold into the dough with blueberries and almonds. Shape into a large circle and flatten it then slice in to 8 triangles
    brush some cream over the top then sprinkle over the crushed amaretti cookies and almonds and bake for 20 minutes,
    leave to cool then enjoy.

      These look delicious. I'm still not sure about triangular scones though. I'm a purist!

      These scones looks good! I love them for simple ingredients and so many ways to prepare. As for today savoury scones with dried tomatoes are my number one 🙂
